Meal Prep a Weeks Worth of Breakfast Burritos!
30 eggs - (you can go to Costco and purchase 2 thirty packs for around $10)
Sausage - (I like Bob Evans, 1-2 packages of 6 patties)
OR Ham - (go to the meat department at your grocery store, around 2 pounds)
I like to add Spinach, Onion, Banana Peppers, Cilantro, and Cheese (around a 16 oz. bag)
Tortillas - (I like the Mission Flour Tortillas)
Your choice of Salsa
Pretty Simple (the way I like it):
1) Beat the eggs with some milk, salt and pepper.
2) Brown the Sausage or cut up the Ham
3) In a large serving bowl, mix the Sausage (or Ham), Spinach, Onion, Peppers, Cilantro, Cheese
4) Cook the eggs
5) Stir in the finished eggs into the pre-mixed ingredients
6) Add your choice of Salsa
7) Make yourself a Burrito making station and start rolling your Burritos. I would guess that this batch will make you around 6 nice sized Burritos.
8) Wrap the Burritos in tin foil, label (so you don’t reach for a 9 month old Burrito one day) and stick them in the freezer.
9) If you are in a hurry, warm Burrito in microwave (for about 1:45 one side, flip 45 sec. other side) OR if you aren’t in a hurry, warm that oven up to 400 degrees and let cook for about 15-20 minutes.
